Elegant and fresh with a pleasant acidity and notes of baked apple, beeswax and thyme with a herb-tinged, citrusy finish. Subtle floral overtones, acacia flower and jasmine. Crisp, dry, refreshing and a wonderful summer tipple. An ancient white variety from northern Italy, bordering Slovenia. Rarely seen elsewhere, wines are typically light in body and offer immense vinous pleasure.

Ideal as an aperitif, or served with seafood starters, fish and vegetable first courses. It is perfectly matched to ham and fresh cheeses. The acidity in the wine would be magic against deep fried seafood, lemon caper veal piccata, fresh salads or mussels in a white wine garlic sauce.

Ribolla Gialla is the autochthonous white grape par excellence. It is probably the oldest vine in the region as the earliest evidence of its diffusion dates back to the Roman Empire. This grape variety with its late bud burst and ripening is inextricably linked to their local history.
