      Tasting Notes and Description
      At the far north of the Pic Saint appellation Loup, in Languedoc, at the foot of the causse Cévenol, the Château de Lascaux spans 45 hectares of scrubland set deep in the wild. The climate, marked by continental influences, succeeds particularly in syrah.

      2019 Assemblage: Organically grown - Syrah 80%, Grenache 20%.

      Color: Deep garnet red with garnet reflections.

      The Nose: Expressive, powerful and complex with notes of liquorice, sweet spice, black olive, prune and black fruit.

      Palate: Powerful attack on the palate with soft tannins and a full body , volume velvety. A long and very spicy finish with black fruits and red berries and some menthol notes, very well balanced. Finesse and elegance are the essential characteristics of this wine.

      Food match: Tagines of lamb, rib-eye steak with thyme butter, beef with black olives.

      "Certified organic (Ecocert) and biodynamic (Demeter). 80% Syrah, 20% Grenache. Hand-picked. Destemmed, three to four days' maceration, 15- to 20-day fermentation in conical vats, aged in French oak tuns for 12–14 months, then three months in vats before bottling and one year in bottle before release.
      The dominant lead of Syrah combined with the oak-ageing accentuates farmyard and old, well-worked-leather tones, taking the wine down a much more savoury track than the Carra 2021. Dried fruit. The tannins are more powerful, more astringent and the wine feels as if there is a bit more alcoholic heat. Powerful and impressive... Drink to 2030."
