    Precise, the bouquet delivers notes of flint infused in the crunch of citrus fruits, mixed with quince, honeysuckle and white flowers. Of medium body, the palate is dominated by fine pearls of acidity which stretch the wine into phenomenal length and definition. The appellation: The name of this Climat Grand Cru in Puligny-Montrachet can more probably be explained, like the names of the other plots, by the location that this Climat occupies on the hillside: it is the highest. Referring to medieval society and its hierarchy, being the highest placed, he deserves the title of Knight – from the medieval Latin Caballarius “groom, squire”. This title went to the eldest son of a nobleman admitted to the order of Chivalry, a military institution whose members were religiously consecrated. Chevalier-Montrachet is often considered one of the absolute references of Chardonnay in the world, the finest of the three major Grand Crus of this magical hill (Montrachet, Chevalier-Montrachet and Bâtard-Montrachet). Wine and style: After a light settling, the musts are put into barrels mainly of 600 liters and also of 228 L where the alcoholic and malolactic fermentation takes place. 40% new barrels with wood coming mainly from Allier, in long and light toasting. The first racking takes place after about a year of aging in wood to then begin the second phase (4 to 6 months) in stainless steel vats in order to maintain freshness and tension in the wine. Vine cultivation: The estate has been practicing organic viticulture since 1995. Since 2005, biodynamics has complemented these practices that respect the soil and life. The wines are Ecocert certified. "A little yellower in colour than expected. The bouquet is rather quiet, another wine not ready to express itself. Still, there is a suggestion of the intensity to follow, then a riper fruit on top of the usual white limestone bench. Everything is there but a bit topsy turvy just now.
