This de-alcoholised sparkling rosé is a blend of 96% Sauvignon Blanc and 4% Grenache. Light salmon pink in colour with aromas of ripe strawberries and sweet plum, following through to a balanced palate with a lingering finish that will leave you wanting more.

Serve well chilled on its own or with salmon salads, fresh sashimi or ceviche.

The winery is located in Darling, South Africa. Terroir: Vineyards from different slopes and different soils are used for this blend. The cool nights and cool South-westerly wind in the afternoons cool the vineyards down and help to form the elegant fruit flavours. Soil types consist of weathered granite to deep red and well drained soils. Vineyard type: Bush vines with no irrigation.

The grapes were crushed and destalked. Fermentation took place over 18 days at 14°C. The grapes and juice were handled reductively to prevent oxidation and lock in fruitiness. The wine was left on lees for 2 months to add complexity. It was then de-alcoholised by way of a gently spun cone technology. This was done under vacuum at a low temperature to ensure that the product retains its distinctive wine body, colour and flavour. Finally, the base wine was infused with CO2 to create a stream of bubbles.
