      Tasting Notes and Description
      This old vine Chablis undergoes a maturation process of 18 months which guarantees power, minerality and. It is fresh and fruity (white fruits, with delicate citrus notes), and already showing good salinity and minerality. Pleasant as an aperitif, this is a great partner with all seafood: oysters, shellfish and grilled fish.

      Nathalie and Gilles Fèvre grow their Chardonnay vines from parcels situated beside the village of Fontenay-près-Chablis, at the very heart of the Chablis vineyards. On high plains or steep hills, all the Domaine's Chablis grows on stony Kimmeridgien limestone soils. Some parcels were planted by their great grandfather, Marcel, around 1950/1960. The average age of their vines is 50 years old.

      Vineyards:
      Old Chardonnay vines planted around 1950/1960. 5,700 vines per hectare.
      The soil's main substrate is Jurassic limestone (specifically, Kimméridgian limestone).
      Vineyards of 7 hectares planted around the village of Fontenay-Près-Chablis.

      Winemaking:
      Vinification and ageing on fine lees over 18 months in airconditioned stainless steel tanks.
      Measured filtration (depending on wine balance).
      Bottling and storage in an airconditioned cellar before shipping.
      Around 6,000-7,000 bottles produced per year.
