      Tasting Notes and Description
      Pale yellow, express scents of white flowers, almonds and toast. The mouth has great minerality that brings out the character of the soil, flavours of honey linger on the palate. To be enjoyed in its youth and freshness. Serve at 10 - 12°C. Beautiful alongside white meat, shellfish, fish in sauce or cheese such as Époisses and Langres.

      Born into families of winegrowers, Céline and Frédéric embarked on their own adventure in 2013. They created their Domaine nestled in the heart of the Chablis vineyard. The 25 hectares of vines are mainly composed of Chardonnay grapes from the Burgundy and Chablis appellations. With a deep attachment to the roots of their families, they are building a new Domaine with a breath of freedom. Céline and Frédéric, in turn, write a new page in the history of wine.

      The vineyard for the Côtes Salines is in the village of Saint-Bris-le-Vineux. It is northwest facing and the soil is Portlandian with an upper Jurassic layer composed of limestone. The average age of the vines is 28 years.

      Herby lemon aroma, definitely mineral in its stone-dust and coastal impression. (The name suggests saltiness but apparently this is just a fantasy name and nothing to do with the soil composition.) Almost sweet-sour on the palate, a salty character and sweet lemon. Light, dry, crisp, with a creamy roundness on the finish."

      "Frédéric explained that the vines that are used for their Bourgogne Chardonnay “Côtes Salines” bottling fall just outside of the Chablis appellation, planted on Kimmeridgian soils, and the wine often approaches the quality of many Chablis villages bottlings. The 2023 version is very strong, delivering an aromatic constellation of apple, pear, chalky soil tones, white flowers and a nice touch of beeswax in the upper register. On the palate the wine is deep, full-bodied and complex, with really excellent depth of fruit at the core, a good spine of acidity, lovely soil signature and a long, complex and well balanced finish. Very classy Bourgogne! Drink to 2035."

      “This satisfying value pick opens with moderate aromas of green apple and nectarine aromas with a suggestion of oyster shells and hawthorn flowers. The texture is silky, but moderate concentration and balanced acidity make this a wine for current drinking. The grapes are from a large parcel below the village of Préhy just outside of the Chablis appellation. Vinified and matured in tank to preserve the freshness of the fruit.”
