      Tasting Notes and Description
The third vintage of this cuvée designed to showcase the elegance of Faugères but meant for earlier drinking. From the vines around the cave. Grenache, a bit of Syrah and some Carignan, young and old. À la Venvole is an old French expression meaning à l’improviste or unexpectedly. Certified organic. Brigitte Chevalier describes this as un vin de bistronomie.

Brigitte Chevalier of Domaine de Cébène makes truly superb wine by any measure, hand-made, terroir-dictated wine that has been getting better and better now that she has her own custom-built cellar dug out of an isolated hill, rather than having to make wine in cramped rented space in a nearby village. Brigitte is one of the stars of Faugères, one of the Languedoc’s most distinctive appellations in the hills above Béziers.

"Brigitte’s newest wine named after a quote by Georges Brassens, an old expression meaning improvised. A change of scene from the rest of the range, a light floral style, more black fruited, very elegant from the cooler north facing slopes. Carignan dominates on the nose, Syrah and Grenache make an appearance later. Made from younger vines so not the depth of the other wines but certainly the most approachable at the moment. No topsoil, planted straight into the rock. 2023-2028."

Matthew Stubbs MW, Tim Atkin MW Languedoc-Roussillon Report 2023 (September 2023)

"Certified organic (Ecocert). Mostly Grenache with some Syrah and Carignan. Spontaneous fermentation and no sulphites during vinification. No oak. Brigitte Chevalier's 'fruity' cuvée.
When Jancis tasted this in August 2022, she mentioned a dry, sudden finish. I can confidently report that nearly 18 months later, that has completely disappeared. It's as if the tannins have become more and more saturated in the plashy joy of the dark-cherry and black-raspberry fruit in this wine. It's pretty much a pure, soaring paean to the glory of Faugères fruit with a deliciously appetising smudge of tea-leaf dust on its nose. In fact, this may be pretty much the perfect time to drink this wine! The finish has lengthened and the wine clings to every corner of the palate, shining like a thousand ruby jewels. For sheer drinking joy, I'd give it 20/20. Jancis wrote this about the 2020, and it describes the 2021 to a T: 'Chock-full of sweet, youthful fruit. Beautifully juicy, unavoidably swallowable. Tannins are hardly there until the very end, but the schist of Faugères is.' Drink to 2027."
