The Neudorf Moutere style is assured - never too overt, everything in balance with moreish salty tang, reminiscent of sun-dried oyster shells. It’s always surprisingly long with a final fan of flavour at the end of the palate. It offers a transparent, crystalline appeal. The oak over the years has slowly been dialled back. Todd uses only 10% new barrels and the oak is beautifully absorbed into the wine.

"Moutere clay gravel soils, wild ferment in barrel (10% new). This is very fine on the nose with some mealy, nutty, spicy notes as well as pear, apple and citrus. The palate is concentrated and dense with some richness to the pear and citrus fruit, with a bready, nutty character from the barrel fermentation and some lovely pear and peach notes. "This has some very impressive complexity and composure with aromas of sliced peaches and nectarines, wet stones, hazelnuts and white flowers. The palate is very powerful and impressively composed, with a bracing core of fresh acidity sitting amid weighty, rich peach fruit.
