      Tasting Notes and Description
Framed within the Protected Designation of Origin Txakoli de Álava , the singularity of the cultivated vineyard and the elaboration used achieve wines of pronounced personality and excellent quality. The wines of Astobiza are made exclusively with grapes produced in our own vineyards, with a development of the closed farm, that is, having a winery sized only to produce the vintage produced in the vineyard itself.

Our vineyard is located in the small rural town of Oquendo, in the province of Álava , about 30 minutes from Bilbao, on a 10-hectare farm divided into 7 microparcels. Located 250 meters above sea level, it is protected by mountains and far from the valley floor, which protects it from fog and winter frosts, which are so harmful. 100% of our grapes are native varieties , mainly Ondarrabi Zuri , some Ondarrabi Zuri Zerratie (Petit Corbu) and a small plot of Izkiriota known as Gros Manseng .

Astobiza Txakoli is clean and bright in appearance. Straw yellow in colour with green highlights. Intense varietal aromas on the nose, with notes of white fruit, (pear and apple) citrus, (grapefruit) and stone fruit, (peach). Fresh and lively on the palate, tasty, balanced, long with a persistent aromatic finish, with characteristic slight bitter varietal character and inflected wth refreshing minerality.

Serve cold, in a glass, at about 8-10 degrees, it is ideal to combine with sashimi, and sushi, perfect with simply grilled little oily fish and cold seafood. For contrasting pairings, try with Gorgonzola and Cabrales type cheese for an interesting juxtaposition.

If you've been to San Sebastian, you will know as every bar and restaurant will serve you this to drink!.

"It's bright and pale, with faint white fruit and flowers, more vinous than the wines from the coastal zones. It's clean, fresh, balanced and nicely crafted—you see the hand of a good winemaker here. It's medium-bodied, has 12.5% alcohol and feels refreshing and bright.
