Bodegas Hidalgo La Gitana was founded in 1792 and since then the firm has passed from father to son, being today one of the few winemaking companies managed by the family and directed by the eighth generation in direct line of the founder.

Burnt yellow gold in colour, clean and bright. Intense aromas of nuts, hazelnuts and wood. The palate is soft and dry with notes of pastries, nuts and dried fruits.

Palo Cortado is unusual, in that it first ages under a film of yeast, or 'flor', which protects it from oxygen, but then loses that flor to age oxidatively at the very end of the process. Thus, the freshness of Manzanilla and the complexity of dry Amontillado are combined. Over twenty years old, Palo Cortado is entitled to the designation VOS, (Very Old Sherry). About 190 years ago when the French occupied this part of Spain this sherry was sold to the British troops under the name "Wellington". The 1st Duke of Wellington's portrait is still used on the label today. Another sherry was also simultaneously sold to the French under the name "Napoleon"!

The grapes were harvested in early September when they reached perfect ripeness and the fine must was obtained without putting pressure on grapes, destined for the production of Palo Cortado.

A great accompaniment to nuts, Jamón ibérico, grilled meats and mature cheeses.
