Chocolate

Wine with chocolate can be tricky as the sugar that coats your tongue mutes the fruitiness of a wine. Therefore, the paired wine needs to have the same level of sweetness as the chocolate. Enter Quady Winery Elysium Black Muscat. Elysium, "state of eternal bliss" in Greek, is the perfect title for this exciting wine.

An aroma of roses accompanies dark fruit cherry, strawberry. Balanced with fruit acidity to finish clean. Elysium is wonderful with chocolate and with cream desserts, cheesecake & fruit desserts. Try it poured it over ice cream. It also pairs wonderfully with cheeses, especially goat's cheese or Gorgonzola.

Apéritif

Bubbles always marks a sense of occasion and Riolite Vini Trevisana Prosecco makes a fabulous toast to the beginning of spring. A floral nose and refreshing palate of peach and granny smith apple, supported by well measured acidity. Trevisana makes an ideal partner to an array of canapés.

 


Smoked Salmon

For smoked fish avoid wines that are sweet, tannic or too full bodied. Instead opt for something fresh and delicate. You don’t want a wine to compete with the rich saltiness of smoked salmon but, rather something that compliments it. A Provence rosé such as Château Vignelaure Ode To Joy is an ideal pairing with its soft raspberry, coupled with yellow peach tones and fresh acidity that slices through the richness of the fish.

 


Spring Salads

Sauvignon Blanc is always a fool proof partner for green salads thanks to its crisp acidity, often tropical fruits and herbaceous character.  However, if you’re feeling experimental, why not opt forPajzos Tokaji Hárslevelu T 2018. Bursting with tropical fruits and bright peach notes, this Hungarian underdog will pair beautifully with a variety of salad dishes thanks to its brisk acidity and distinct minerality. 

 


Roast Chicken or Turkey

With soft tannins and high acidity to cut through any fattiness Viña Casablanca Cefiro Pinot Noir is a perfect match for roasted white meats. It exudes notes of cherry and blackberry alongside a subtle earthy character that will compliment a variety or herb seasonings.

In terms of white wine pairings, something gently oaked with nutty nuances goes well with white meats. With a subtle touch of oak, Boekenhoutskloof Wolftrap White fits the bill perfectly. Wolftrap’s zesty acidity makes it a perfect match for roast chicken with lemon and thyme seasoning.

 


Roast Leg of Lamb

Whilst Bordeaux or a quality Côtes du Rhône might be the obvious choice for roast lamb, why not try something a bit left of field? Portuguese reds such as Herdade do Sobroso Rio dos Patos Red pair wonderfully with an array of roast meats. Rio dos Patos exhibits alluring savoury aromas of dried herbs and wet gravel supported by black fruits. The palate displays bright cassis, spiced plum and cracked black pepper. Its full body with integrated ripe tannins will accentuate the tenderness of the meat.
