My choice would be to go for a tawny port – it is like Christmas in a glass. Dried fruit and nutty aromas, it matches pudding perfectly. Tawny ports start their life out as LBV ports, but are aged in oak barrels over a number of years. Over this time they lose their bold fruit and tannins, and gain a more dried, honeyed fruit character with a lovely toasty nuttiness. Try either of the tawnys from Quinta de la Rosa, the 10 year old is lighter in style, the 20 year old has a more intense flavour profile. Serve slightly chilled, it will set off your dessert perfectly, rounding off the biggest meal of the year!
