Today, the estate cultivates 28 hectares of Sauvignon Blanc, along with Gamay, Cabernet Franc, Côt (Malbec), Chardonnay, and Chenin Blanc. The average age of the vines is around 30 years, with some plots over 50 years old. The vineyard is entirely mechanically farmed, and since 2019, no chemical herbicides have been used. Domaine Bellevue has held High Environmental Value (HVE3) certification since November 2019, reflecting its commitment to sustainable viticulture.
The winery itself is fully climate-controlled and divided into four specialised areas: one for white wine vinification, one for pressing and vinifying reds and rosés, one for bottling, and another for bottle storage. All tanks are thermoregulated and made of food-grade resin or stainless steel. The floors are covered with a food-safe resin to ensure optimal hygiene and easy maintenance—supporting the estate’s continuous pursuit of excellence from vine to bottle.
