A blend of 50% Chardonnay, 30% Pinot Blanc & 20% Pinot Noir (vinified as a white wine). The grapes are picked by hand and left on lees for 24 months.

Delicate bubbles on the palate, elegant and refined with freshness and intensity of flavour, the focus isnt so much on the fruit that underspins the wine, but the nuance of nuttiness, marzipan and buttery pastries.

"Hints of chalk and a flicker of lemon appear on the shy nose of this wine before a touch of honey promises richness. With a little more air fine notions of toasted hazelnut appear. The palate combines contrarian notions of freshness with creamy roundness, buttery mellowness with brisk foam. For the finish, the wine reverts to that lovely chalky notion and is absolutely dry.
