Bodegas Hidalgo La Gitana was founded in 1792 and since then the firm has passed from father to son, being today one of the few winemaking companies managed by the family and directed by the eighth generation in direct line of the founder.

Amber in colour with greenish reflections, bright and luminous. The nose is pungent, soft and attenuated, with hints of hazelnuts, nuts and wood. On the palate it's dry, soft and elegant.

Amontillado sherry is aged fino that has lost its protective flor and has gone on to develop oxidatively. It is an amber-coloured sherry that is nutty and complex with a long finish. It is fortified to around 17.5% alcohol to protect it during its development and because it has been aged oxidatively it will last for longer once opened. It's great when served very slightly chilled.

In addition to being an ideal aperitif, it is perfect with white meats, fish and cheeses. Aged Manchego is a classic, but Amontillado is also surprisingly good with cheddar, aged Comté and parmesan.
